Theo Schnegger is a talented, Michelin-rated chef, but the main reason he's the perfect person to oversee Sinatra's kitchen is this: He used to cook for Ol' Blue Eyes himself.

As head chef at San Domenico, an Italian restaurant in New York's South Central Park, Schoenegger would cook for Luciano Pavarotti, who lived next door. "His guests were always interesting, and among them one night was Sinatra," recalls the chef, who soon was preparing Frankie's favorites for dinner with the legendary singer.

Fast forward three decades and many of the same dishes are incredibly popular at Encore's Sinatra. "Frank loved the classics of Italian fine dining—he liked a good veal with a little Milanese salad, and veal parmigiana and spaghetti were his dishes," notes Schoenegger. "We cook them just the way he likes them and balance that with a selection of seasonal Italian cuisine, including fresh pasta and fish."

Finally, don't forget dessert: Cappello's dark chocolate mousse topped with Jack Daniel's speckled panna cotta looks like Sinatra's famous fedora. "It's a real honor for Frank," adds Sheneger.
